
INGREDIENTS
2 cups self-raising flour
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
1 tsp mixed spice
1 cup white sugar
2 eggs
1 tsp vanilla extract
1 cup oil (I use melted coconut oil)
2 large apples, peeled, cored and diced
METHOD
- Preheat the oven to 180C.
In a large bowl, whisk to combine the flour, baking soda, salt, spices and sugar. Make a well in the middle and pour in the eggs, vanilla extract and oil. Gently mix until just combined. Fold in the diced apple. - Line a cake tin with baking paper and pour in the cake batter. Bake for approximately 1 hour or until the cake is cooked through – a. A skewer inserted into the middle of the cake should come out clean.
- Cool for 5–10 minutes in the tin before transferring to a rack to cool. Dust with icing sugar before serving.
