Peanut caramel slice 2 (1)

Makes approx. 16 pieces.

INGREDIENTS

200g butter, at room temperature 

½ cup sugar 

1 egg 

1 ½ cups plain white flour 

1 tbsp cocoa powder 

½ cup peanut butter

1 x 395g can Nestle ready-to-use caramel

200g dark chocolate 

1 tbsp olive oil 

2-3 tbsp peanut butter 

METHOD

  1. Preheat the oven to 180°C.
  2. Cream the butter and sugar until pale and fluffy. Add the egg, flour, cocoa powder and peanut butter and mix until combined. Spread into a lined baking tin and bake for 15 minutes, or until the slice is just starting to brown around the edges. 
  3. Remove from the oven and carefully spread the tin of caramel evenly over the base. Return to the oven for a further 10 minutes. 
  4. While the slice cools, melt the chocolate and olive oil in a small pot over a low heat. Pour over the caramel layer and then dollop on the peanut butter. Using a toothpick, swirl the peanut butter through the melted chocolate, then allow the whole slice to set fully before cutting. To make cutting through the chocolate easier, pour hot water over a sharp knife first.
