Serves 6

 

Ingredients

1kg boneless skinless chicken thighs, diced

250g bacon, diced

6 button mushrooms, chopped

2 carrots, diced

1 leek, sliced

2 onions, diced

4 cloves garlic, crushed

1 tbsp dried mixed herbs or 2 tbsp fresh thyme and rosemary

1 cup cream

1 cup chicken stock

1 tbsp Dijon mustard

Method

  1. Preheat the oven to 170°C regular bake.
  2. In a large Dutch oven or frying pan sear the chicken over a medium-high heat, until golden brown.
  3. Add the bacon, mushrooms, carrots, leek, onion and garlic and cook, stirring occasionally, until they are soft and starting to caramelise.
  4. Reduce the heat to medium and stir through the herbs, cream, stock and mustard, stirring well to scrape off any browned bits stuck to the bottom of the pan.
  5. Cover, and bake in the preheated oven for 1 hour.
  6. Taste and season with salt and pepper before serving.
